Asian Noodle Salad with Sweet and Spicy Almond Butter Dressing

 

 

 

 

 

 

Dressing:

1/2 cup almond butter

1/2 cup apple cider vinegar

1 Tbs toasted sesame oil

2 Tbs coconut aminos

1 tsp asian chili sauce, such as sambal oelek or sriracha (asian section of most supermarkets)

2 oz apple juice

3 drops or 1/2 packet stevia

1 Tbs hoisin sauce

Salad:

1 lb chicken breast, cooked and cooled

8 oz yam noodles or spiralized zucchini or daikon radish noodles

1/2 cup thinly sliced scallions

1 lg carrot thinly julienned

1/2 bunch cilantro

1 apple, diced

1/2 cup jicama, diced

1 red bell pepper, diced

3 cups arugula or shredded napa cabbage

toasted sesame seeds to garnish

Whisk dressing ingredients together in a small bowl until smooth.

Add the noodles, cooled chicken and veggies to a large bowl.

Pour the dressing over the top and toss.

Sprinkle the sesame seeds over the top to garnish!
