Bean-less Hearty Bison Chili

 

 

 

 

 

 

 

2 large onions, chopped

3 large carrots, chopped

3 cloves of garlic, minced

2 ½ lbs ground bison or grass-fed ground beef

2 TBS chili powder

2 tsp cumin

2 tsp paprika

1/2 tsp celery seed

1 tsp fresh ground pepper

1 large tomato chopped (or 1, 15oz can diced tomatoes)

3 bell peppers, chopped

1 large zucchini, diced

1 quart of tomato juice, bottled or fresh(spicy works well)

¼ cup fresh cilantro(optional)

Add onions and carrots to a large pot or dutch oven with a ¼ cup of water. Cook over medium heat until onions are translucent. Add the meat and garlic, breaking up the meat until it is cooked through. Add the spices to the meat mixture and continue frying for a few additional minutes. Add the tomato, bell peppers, zucchini, and tomato juice. Bring to a boil, and then reduce heat and let simmer for 30 minutes. Add cilantro and remove from heat.

    4 miles south of Cheyenne is Terry Bison Ranch, where a thousand bison fatten for market. It’s like a tourist attraction. Just don’t try to chase one across the field. Tourists ride in train cars. No industrial meat processes, here. Wish I could afford more bison in my diet.
