Spicy Thai Almond Sauce….3 Ways…
- 1/4 cup raw almond butter
- 1 TBS tahini
- 1/4 cup water
- fresh squeezed lime juice from 2 limes
- 2 TBS coconut aminos
- 1 tsp fish sauce
- 1 1/2 TBS raw pure honey or coconut nectar
- 1 stalk lemongrass, minced
- 2 small cloves of garlic
- 1/2 thumb sized piece of ginger, grated
- sriracha sauce to taste
throw everything in the food processor and mix until smooth.
Dip, Smother, Mix…
Spicy Thai Turkey Collard Wraps (Dip)
- 6 collard leaves
- your favorite assorted veggies…jicama, red bell pepper, carrots, green mango, sunflower sprouts, etc cut into matchsticks
- leftover turkey meat, or preservative free sliced turkey from your favorite deli
To prepare the collards, cut each leaf in half lenghtwise following the stem.
Wrap your prepared veggies and turkey in the wrap.

Hold on tight and dip to your hearts content….
Spicy Thai Noodle Salad with Chicken and Green Mango (Smother)
- 2 zucchini cut into ribbons with your vegetable peeler
- 1 carrots, cut into matchsticks or julienned
- 1/2 red bell pepper, julienned
- 1/2 green(not ripe) mango, peeled and julienned
- 1/4 red onion, sliced very thinly
- 1 grilled chicken breast
To Smother:
- Spicy Thai Almond Sauce
To top:
- 2 TBS cilantro, finely chopped
- 2 TBS cashews, finely chopped
Toss all of the salad ingredients into 2 separate bowls, smother with Spicy Thai Almond Sauce, and top with cilantro and cashews.
Warning.
Wait to SMOTHER until just before serving…
Spicy Thai Turkey Salad Cups (Mix)
- 1 lb ground turkey breast meat, cooked and cooled
- 1 red bell pepper, diced finely
- 1 red onion, diced finely
- 1 ripe mango, cut into small bite size pieces
- 1 stalk celery, diced finely
- 1/2 cup cilantro, finely chopped
- 2 TBS mint, finely chopped
- 1-3 thai red chiles, finely chopped
- 1/2 cup Spicy Thai Almond Sauce
- 8 butter lettuce leaves
Put the cooked turkey meat in a bowl. Add the red bell pepper, red onion, mango, celery, cilantro, mint and thai red chiles.
Mix.
Pour on the Spicy Thai Almond Sauce.
Mix. Spoon onto 2 lettuce leaves per person. Serve with fresh cut limes.
