Meditteranean Meatloaf

 

 

 

 

 

 

2 lbs grass-fed ground beef

1/2 cup roasted red bell pepper, minced

1/2 red onion, minced

1/2 cup olive tapanade or chopped kalamata olives

2 cloves garlic, chopped

1/4 cup chopped sun-dried tomatoes (in oil or rehydrated in warm water)

1 tsp onion powder

1 Tbs tomato or umami paste

1 tsp salt

1/2 tsp fresh ground pepper

1/2 cup italian parsley, chopped

2 TBS mint, chopped

1/2 cup feta cheese(optional)

1/4 cup pinenuts(optional)

Directions:

Preheat oven or Traeger Grill to 375 degrees. In a large mixing bowl add beef, red bell pepper, onion, olives, sun-dried tomatoes, onion powder, umami or tomato paste, 1 tsp salt, 1/2 tsp pepper, parsley, and mint; mix well with hands. Shape into a large loaf and place in a large baking dish, lined with aluminum foil for easy cleanup or right on the grill grate of your traeger. Bake 45-55 minutes until cooked through . Serve Sprinked with feta and pinenuts(optional)

For a lighter meal, replace beef with lean free range ground turkey.

  1. made this tonight for me and my hubby. we love, love, love. I added bacon strips on top and had to let it cook about 10 extra minutes. yum!
