Creamy Herb Dressing

It’s starting to feel like summer here in Montana, and  I have been craving salads since I came home from Sweden. I had some chives growing in my garden and some extra cashews and coconut water left over from making the New York “Cheezecake” so I thought I would try making a creamy herb dressing for some salads this week. The finished product was similar to the ranch dressing you all loved as kids…and probably still love…come on don’t deny it!

1 cup cashews, macadamias, pinenuts or combination (soaked for 1 hour)

3/4 cup thai coconut water(or regular water if you dont have this)

1/3 cup lemon juice

2 cloves garlic

1 teaspoon onion powder

1 teaspoon dried parsley

1 teaspoon dried dill

1 T fresh chopped chives

1/2 t sea salt

fresh cracked pepper

throw everything into your blender, and blend until smooth!
