Well, I’ve been grilling all winter, thanks to my amazing traeger grill/smoker, but now is the official start of grilling season…so here’s a recipe to get you started this year.
Grilled Sweet and Sour Chicken
3 garlic cloves 1
(3 inch) piece of chopped, peeled ginger
2/3 cups fruit sweetened peach or apricot preserves
1/4 cup coconut aminos, or tamari
Juice from 1 lime
1 teaspoon dijon mustard
2 Tbs water
¼ t red pepper flakes
2lbs chicken thighs
- In a small bowl, mix together garlic, ginger, preserves, tamari, lime juice, mustard, water and red pepper flakes.
- Preheat your grill for high heat
- Add chicken to a bowl and pour ½ of the peach sauce over the top. Toss to coat.
- Grill chicken 8 minutes on each side, or until juices run clear. Brush the remaining 1/2 cup of sauce on the chicken a few minutes before it is done. Remove from heat.
