Coconut Curry Glazed Carrots

This is one of those meals that you throw together in panic mode because the fridge is empty and you dont have time to run to the store…

and it turns out to be pretty dang AMAZING!

 

 

 

 

 

 

 

Coconut Curry Glazed Carrots

Ingredients:

8 large carrots, peeled and cut

1/2 cup coconut milk

1 teaspoon sweet curry powder

1 teaspoon honey

1/2 teaspoon salt or to taste

cilantro to garnish

 

Directions:

  1. Put carrots in a large saucepan with about 2 cups of water in the bottom, and place a lid on the saucepan.
  2. Turn the burner to hight, and steam the carrots in the water until tender.
  3. Pour off the water and turn your burner down to medium add the coconut milk, curry powder, honey, and salt.
  4. Stir for 2 minutes and remove from heat. Top with cilantro.
