Baby Kale Salad with Black Pepper and Pinenuts

A super easy salad perfect as a side to any meal!
  • 1 bunch baby kale
  • a few chugs each of extra virgin olive oil and balsamic vinegar
  • a few cranks fresh ground black pepper
  • ¼ cup pine nuts, toasted in a dry skillet
  • pecorino romano shavings

  1. Place kale, olive oil, vinegar and black pepper in a bowl and toss.
  2. Add pine nuts and pecorino just before serving.
