Bacon, Blue Cheese, Balsamic Marinated Onions…The ALL AMERICAN MEAL! I made my Perfect Grain-Free Burger Bun recipe into slider buns, by using a tablespoon sized ice cream scoop (instead of regular size, like stated in the recipe) to dollop the dough onto the parchment.
Once I made the buns, I needed a burger recipe…this fit the bill.. I have to say these were the best burgers/sliders I have EVER had…PALEO OR NOT!
Smoked Gorgonzola Beef Sliders with Balsamic Marinated Onions and Bacon
Ingredients
- for the onions:
- 1 TBS pastured butter, or coconut oil
- 2 large red or yellow onions, sliced
- 1 TBS honey or maple syrup
- ½ t salt
- 2 tsp balsamic vinegar
- fresh ground black pepper
- for the sliders:
- 1 lb ground beef, buffalo, or wild game(I used elk)
- ½ red onion, chopped finely
- 2 tsp stone ground mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 oz gorgonzola, crumbled
- ½ tsp salt
- fresh ground black pepper
- 6 large pieces of cottage bacon, or rustic thick sliced bacon, cooked
Instructions
- For the Onions:
- Heat the butter in a heavy bottomed pan, on medium heat.
- Add the onions and stir to coat them in oil. Spread the onions evenly over the bottom of the pan so to cook them evenly. Cook on medium-low for 15 minutes, adding water if necessary to keep them from drying out.
- Add honey and salt.
- Turn the temperature to low and Cook for another 25 minutes.
- Add the balsamic and black pepper.
- Serve on the sliders.
- For the sliders:
- Mix the ground meat, red onion, mustard, garlic and onion powders, gorgonzola, salt and black pepper in a medium sized bowl until incorporated. Form into 2-3 oz sliders, and chill in the fridge while you preheat the grill.
- Traeger Instructions:
- Smoke on 30 minutes, Turn up to high, and cook for 20-25 minutes, turning once, to your preferred doneness, or until the internal temperature reads 160 degrees F. On a meat thermometer.
- Gas Grill Instructions:
- Grill on high for 4-5 minutes on each side, or until the internal temperature reads 160 degrees F. On a meat thermometer.
To Assemble…
Toast the Grain-Free Burger Buns, and slather with homemade mayo;)
Top with the bacon, onions and sliders.
We served these with a fresh spinach side salad, and homemade dill pickles!
