Paleo Pad Thai with Jody’s Secret Sauce

 

 

 

 

 

 

Serves 2

Today for lunch, we had my awesome (yes I am tooting my own horn here) Paleo Pad Thai with Kelp noodles…It has taken me a damn long time to figure out the precise measurements for the sauce, but I think I got it PERFECT this time! I am not giving the recipe out right away, because it took me a loooong time to develop…but I will give you the ingredients

Pad Thai Sauce:

Red Onion

Garlic

Lime

Tamarind

Stevia

Coconut Nectar

Fish Sauce

Ginger

Sriracha Sauce

1 chicken breast or shrimp, cut into bite sized pieces and cooked

2 eggs, scrambled

1 bag of Kelp or Yam Noodles

1 cup bean sprouts(not sure if these are paleo, but I really dont give a ….)

Toppings:

1 bunch green onions

1/2 bunch cilantro

a handful chopped cashews

Scramble the eggs and cook the chicken or chicken, you can do this in the same frying pan as long as it is big enough to keep them separate. Remove and put on a plate.

Add the noodles and sauce to the frying pan(if they are kelp noodles, you want to give them more time to cook, because it takes longer for them to cook, and soak up the sauce. \

When the sauce has soaked into the noodles, and the noodles are tender, add the chicken or shrimp and egg back into the pan and warm for a few minutes.

In the meantime, chop your toppings.

Place the noodles, chicken or shrimp and eggs on a plate, and sprinkle with toppings. Serve with extra sriracha sauce if you like it HOT!
